Ingredients

  • 150 grams almond flour
  • 60 grams unsalted butter
  • 1 large egg
  • 3 medium leeks
  • 1 tablespoon olive oil
  • 3 large eggs
  • 200 milliliters heavy cream
  • 100 grams grated Gruyère cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon ground nutmeg

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a mixing bowl, combine the almond flour and a pinch of salt. Add the butter and rub it in with your fingers until the mixture resembles breadcrumbs.

Step 3

Add the large egg to the bowl and mix until the dough comes together. Form into a disc, wrap in plastic wrap, and refrigerate for 10 minutes.

Step 4

While the dough is chilling, clean the leeks thoroughly and slice them into thin rounds.

Step 5

Heat olive oil in a frying pan over medium heat, add the leeks, and cook until soft, about 5-7 minutes. Remove from heat and set aside.

Step 6

Remove the dough from the refrigerator and press it into a 9-inch round pie pan, making sure to distribute it evenly across the bottom and up the sides.

Step 7

Prick the base with a fork and bake the crust in the oven for 10 minutes until lightly golden. Remove from the oven and let cool slightly.

Step 8

In a bowl, whisk together the remaining 3 eggs, heavy cream, salt, black pepper, and nutmeg.

Step 9

Scatter the cooked leeks evenly over the pre-baked crust. Pour the egg mixture over the leeks and sprinkle the Gruyère cheese on top.

Step 10

Bake in the oven for 25-30 minutes until the filling is set and the top is golden brown.

Step 11

Allow the quiche to cool slightly before slicing and serving. Enjoy your delicious Low Carb Quiche Poireaux with a crisp side salad.
