Ingredients

  • 2 cups Almond flour
  • 3 quarters cup Pumpkin puree
  • 0.5 cup Erythritol or preferred low-carb sweetener
  • 1 teaspoon Baking powder
  • 1 tablespoon Pumpkin pie spice
  • 0.5 teaspoon Salt
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.25 cup Unsweetened almond milk
  • 0.25 cup Coconut oil, melted

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a donut pan with non-stick spray or a little coconut oil.

Step 2

In a large mixing bowl, combine the almond flour, erythritol, baking powder, pumpkin pie spice, and salt. Whisk until well mixed.

Step 3

In another bowl, whisk together the eggs, pumpkin puree, vanilla extract, almond milk, and melted coconut oil until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix the batter.

Step 5
