Ingredients

  • 1 head Cauliflower florets
  • 1 large Egg
  • 0.5 cup Parmesan cheese, grated
  • 1 cup Mozzarella cheese, shredded
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Garlic powder
  • 1 tablespoon Olive oil
  • 0.5 cup Pizza sauce
  • 4 slices Prosciutto slices
  • 1 cup Fresh arugula
  • 0.5 cup Cherry tomatoes, halved
  • 0.25 teaspoon Crushed red pepper flakes

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

Pulse cauliflower florets in a food processor until you have a rice-like consistency.

Step 3

Transfer the cauliflower rice to a microwave-safe bowl and microwave on high for about 4-5 minutes. Let it cool.
