Ingredients

  • 1 medium head Cauliflower
  • 1 cup Almond flour
  • 0.5 cup Parmesan cheese, grated
  • 1 large Egg
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0 as needed Olive oil spray

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into florets and steam them until tender, about 8-10 minutes.

Step 3

Transfer the steamed cauliflower florets to a food processor and pulse until finely chopped, resembling rice.

Step 4

Place the cauliflower rice in a clean tea towel and wring out as much moisture as possible.

Step 5

In a large mixing bowl, combine the drained cauliflower rice, almond flour, Parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.

Step 6

Scoop about 1 tablespoon of the mixture and form it into a small ball. Flatten it slightly to form a disk, and use a straw or the end of a spoon to make the eyes and a curved tool to create the smile.

Step 7

Place the smiley faces on the prepared baking sheet and lightly spray them with olive oil.

Step 8

Bake in the preheated oven for 12-15 minutes, or until golden and firm to the touch.

Step 9

Allow to cool slightly before serving and enjoy your low-carb snack!
