Ingredients

  • 500 grams Cauliflower florets
  • 100 grams Shredded cheese (cheddar or mozzarella)

  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 50 grams Pork rinds (crushed)

Directions

Step 1

Steam the cauliflower florets until very tender, about 10-12 minutes. Drain well and pat dry with a kitchen towel to remove excess moisture.

In a large bowl, mash the cauliflower until it resembles the texture of mashed potatoes.
