Ingredients

  • 1 pound Pork tenderloin
  • 2 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 1 tablespoon Ginger, grated
  • 6 cups Low-sodium chicken broth
  • 2 tablespoons Soy sauce
  • 1 tablespoon Fish sauce
  • 4 cups Zucchini noodles (zoodles)
  • 2 Green onions, sliced
  • 2 cups Spinach leaves
  • 0.5 teaspoon Red chili flakes
  • 1 teaspoon Sesame oil
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Start by preparing the pork tenderloin. Trim any excess fat and slice it into thin strips, about 1/4 inch thick. Set aside.

Step 2

In a large pot, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sauté for about 1 minute until fragrant.

Step 3

Add the sliced pork tenderloin to the pot. Sauté for 3-5 minutes, stirring occasionally, until the pork is browned on all sides and cooked through.

Step 4

Pour in the chicken broth, soy sauce, and fish sauce. Stir to combine, and bring the mixture to a gentle boil.

Step 5

Once boiling, reduce the heat to a simmer and let the soup cook for about 10 minutes, allowing the flavors to meld together.

Step 6

Add the zucchini noodles (zoodles) to the pot. Cook for 3-4 minutes until they are tender but still slightly firm.

Step 7

Stir in the sliced green onions, spinach leaves, and red chili flakes. Cook for another 2 minutes until the spinach is wilted.

Step 8

Drizzle the soup with sesame oil and season with salt and black pepper to taste.

Step 9

Serve the soup hot, garnishing with additional green onions and red chili flakes if desired.
