Ingredients

  • 1.5 cups Almond flour
  • 0.5 cup Coconut flour
  • 0.5 cup Erythritol
  • 0.5 cup Unsalted butter
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 5 medium Plums
  • 1 tablespoon Lemon juice
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.5 teaspoon Xanthan gum

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease a 9-inch tart pan with butter or non-stick spray.

Step 2

In a large bowl, combine 1.5 cups of almond flour, 0.5 cup of coconut flour, and 0.25 cup of erythritol.

Step 3

Melt 0.5 cup of unsalted butter and mix it into the dry ingredients along with a large egg and 1 teaspoon of vanilla extract. Stir until a dough forms.

Step 4

Press the dough evenly into the bottom and up the sides of the prepared tart pan. Prick the base with a fork to prevent bubbling.
