Ingredients

  • 1 large head Cauliflower
  • 1 large Egg
  • 1 cup Shredded mozzarella cheese
  • 0.25 cup Grated Parmesan cheese
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 1 cup Crushed tomatoes
  • 1 tablespoon Olive oil
  • 2 cloves Minced garlic
  • 5 leaves Fresh basil leaves
  • 0 Salt and pepper to taste
  • 0.5 cup Grated mozzarella (for topping)
  • 6 pieces Cherry tomatoes, sliced

Directions

Step 1

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into florets and blitz in a food processor until fine. Steam or microwave for about 8 minutes until soft. Allow it to cool, then transfer to a clean tea towel and squeeze out as much moisture as possible.

In a large bowl, mix the cauliflower with the egg, 1 cup of shredded mozzarella, Parmesan cheese, oregano, garlic powder, and 1/2 teaspoon of salt until well combined. Form the mixture into a flat, round base on the prepared baking sheet, pressing it out evenly.

Bake the crust in the preheated oven for about 15 minutes or until it is golden brown and firm.

While the crust is baking, prepare the marinara sauce. Heat olive oil in a saucepan over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
