  • 2 tablespoons olive oil
  • 120 milliliters tomato sauce, no sugar added
  • 100 grams artichoke hearts, quartered
  • 100 grams prosciutto, thinly sliced
  • 50 grams black olives, sliced
  • 100 grams mushrooms, sliced
  • 1 teaspoon oregano, dried
  • 10 leaves basil, fresh leaves
  • 0.25 teaspoon pepper

Directions

Step 1

Preheat the oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into florets and blend them in a food processor until they resemble rice grains.

Step 3

Transfer the processed cauliflower into a microwave-safe bowl. Microwave on high for about 5-7 minutes until soft.

Step 4

Allow the cooked cauliflower to cool slightly, then place it in a clean kitchen towel and squeeze out as much moisture as possible.

Step 5

In a mixing bowl, combine the cauliflower, egg, 50 grams of mozzarella cheese, parmesan cheese, and salt until well-mixed.

Step 6

Spread the cauliflower dough onto the prepared baking sheet, forming a 1/4 inch thick circle.

Step 7

Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.

Step 8

Remove the crust from the oven and brush it with olive oil.

Step 9

Spread the tomato sauce evenly over the crust, then sprinkle with oregano.

Step 10

Top the pizza with the remaining mozzarella cheese, artichoke hearts, prosciutto, olives, and mushrooms.

Step 11

Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Step 12

Remove from the oven, garnish with fresh basil leaves, and sprinkle with pepper.

Step 13

Slice and serve warm, enjoying the flavors of this delicious low carb pizza option.
