Ingredients

  • 2 whole chicken breasts
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 0.5 cup pesto sauce
  • 1 cup mozzarella cheese
  • 2 medium zucchini
  • 1 cup cherry tomatoes
  • 0.25 cup fresh basil leaves

Directions

Step 1

Preheat oven to 375°F (190°C).

Step 2

Season the chicken breasts with salt and black pepper on both sides.

Step 3

In a large skillet over medium heat, add the olive oil. Once heated, add the chicken breasts and sear for approximately 5 minutes on each side until golden brown. Remove from heat.

While the chicken cools slightly, prepare the zucchini by slicing them into rounds about 1/4 inch thick.

Step 5

On a baking sheet, lay out the zucchini slices, overlapping slightly if necessary.

Place the seared chicken breasts on top of the zucchini slices.

Spread the pesto sauce evenly over the chicken breasts.
