Ingredients

  • 500 g squid (cleaned and cut into rings)
  • 1000 ml water
  • 1 tsp salt
  • 1 large lemon
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley
  • 1 tbsp fresh basil
  • 0.5 tsp freshly ground black pepper
  • 1 clove garlic (finely minced)

Directions

Step 1

Rinse the squid rings thoroughly under cold running water and set aside.

Step 2

Bring 1000 ml of water to a boil in a large pot, adding 1 teaspoon of salt to the water.

Step 3

Once the water is boiling, add the squid rings to the pot and let them cook for 2-3 minutes, or until they become opaque and tender.

Step 4

While the squid is boiling, zest and juice the lemon, setting both the zest and juice aside.

Step 5

Drain the squid in a colander and transfer it to a large mixing bowl.

Step 6

In a small bowl, mix the lemon zest and juice, extra virgin olive oil, finely minced garlic, chopped fresh parsley, chopped fresh basil, and freshly ground black pepper until well combined.

Step 7

Pour the herb and lemon dressing over the warm squid, gently tossing to coat all pieces evenly.

Step 8

Taste and adjust seasoning if necessary, adding more salt or pepper as desired.

Step 9

Serve immediately, garnished with additional fresh herbs if desired.
