  • 4 medium Zucchini
  • 2 tablespoons Olive oil
  • 1 pound Ground beef
  • 1 medium Onion
  • 3 cloves Garlic
  • 14.5 ounces Canned diced tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Parmesan cheese
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Start by preparing the zucchini penne. Using a spiralizer or a vegetable peeler, cut the zucchini into noodle-like strips, resembling the shape of penne pasta. Set these aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook until it's browned, breaking it apart with a spatula or wooden spoon. Drain any excess fat from the skillet.

While the beef is cooking, finely chop the onion and mince the garlic cloves.
