Ingredients

  • 8 oz Low carb penne pasta
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 14 oz Canned crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Mozzarella cheese, shredded
  • 0.25 cup Parmesan cheese, grated
  • 0 optional Fresh basil leaves, for garnish

Directions

Step 1

Bring a pot of water to a boil and cook the low carb penne pasta according to package instructions. Drain and set aside.

In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and chopped onion. Sauté for about 3-4 minutes until the onion becomes translucent.
