Ingredients

  • 1 cup Raw peanuts
  • 2 whole Green chili peppers
  • 1 inch piece Ginger
  • 2 whole Garlic cloves
  • 10 leaves Curry leaves
  • 2 tablespoons Lemon juice
  • 1 tablespoon Coconut oil
  • 0.5 teaspoon Mustard seeds
  • 0.5 teaspoon Cumin seeds
  • 0.5 teaspoon Salt
  • 0.5 cup Water

Directions

Step 1

Begin by dry roasting the raw peanuts in a skillet over medium heat for about 5 minutes, stirring continuously, until they are golden brown. Allow them to cool slightly.

Step 2

In a blender, combine the roasted peanuts, green chili peppers, ginger, garlic cloves, lemon juice, and salt. Blend until you achieve a coarse paste. Add water gradually to reach your desired chutney consistency.

Step 3

In a small saucepan, heat the coconut oil over medium heat. Add the mustard seeds and cumin seeds,—cook until they start popping—approximately 1 minute.

Step 4

Add the curry leaves to the saucepan and let them sauté for a few seconds until fragrant.

Step 5

Remove the saucepan from heat and pour this tempering mixture over the peanut paste in the blender.

Step 6

Blend one more time to incorporate the tempering into the chutney.

Step 7

Transfer the chutney to a serving bowl and adjust seasoning with more salt or lemon juice if needed.
