Ingredients

  • 4 pieces Lamb trotters
  • 1 large Onion
  • 5 cloves Garlic
  • 1 inch piece Ginger
  • 2 pieces Green chili
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Turmeric powder
  • 1 piece Cinnamon stick
  • 3 pieces Cardamom pods
  • 10 pieces Black peppercorns
  • 1 piece Bay leaf
  • 1.5 teaspoons Salt
  • 2 tablespoons Ghee
  • 2 tablespoons Lemon juice
  • 0.25 cup Fresh coriander leaves
  • 8 cups Water

Directions

Step 1

Clean the lamb trotters thoroughly under running water and set aside.

Step 2

In a large pot over medium heat, add 2 tablespoons of ghee.

Step 3

Once the ghee is hot, add cumin seeds and let them splutter.

Step 4

Add finely chopped onion and sauté until golden brown.

Step 5

Add minced garlic, grated ginger, and sliced green chilies, sauté for 2 minutes until aromatic.

Stir in coriander powder and turmeric powder, mix well.

Step 7

Add the lamb trotters to the pot and stir to coat well with the spices.

Add cinnamon stick, cardamom pods, black peppercorns, and bay leaf.

Pour in 8 cups of water and add salt.

Bring the mixture to a boil, then reduce the heat to low.

Cover the pot and simmer for approximately 2.5 to 3 hours, or until the trotters are tender and the soup develops a rich flavor.
