Ingredients

  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 3 large, minced garlic cloves
  • 6 cups fresh spinach
  • 0.5 cups heavy cream
  • 0.5 cups grated Parmesan cheese
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon lemon juice
  • 0.5 teaspoon red pepper flakes
  • 0.25 cups fresh basil

Directions

Step 1

Wash and dry the zucchinis, then use a spiralizer to create zucchini noodles (also known as zoodles). If you don't have a spiralizer, you can use a julienne peeler or mandoline slicer.

Step 2

In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.

Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and the sauce becomes creamy.
