Ingredients

  • 2 pieces (about 1 pound) Chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 4 cups Broccoli florets
  • 8 ounces Low-carb pasta
  • 1 cup Chicken broth
  • 0.5 cup Parmesan cheese, grated
  • 0.25 teaspoon Red pepper flakes
  • 1 tablespoon Fresh lemon juice
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Begin by seasoning the chicken breasts with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until they are golden brown and cooked through. Remove from the skillet and set aside to rest.

Step 3

In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Saute for 1 minute until fragrant.

Step 4

Add the broccoli florets to the skillet, and sauté for 4-5 minutes until they are bright green and tender-crisp. Remove from the skillet and set aside.

Step 5

In a large pot, cook the low-carb pasta according to the package instructions. Once cooked, drain and set aside.

Meanwhile, slice the rested chicken into thin strips.

Return the skillet to medium heat, and pour in the chicken broth. Bring to a simmer while scraping the browned bits from the bottom of the skillet, then add the cooked pasta, broccoli, and sliced chicken back into the skillet.

Step 8

Sprinkle in the parmesan cheese and red pepper flakes. Toss to combine and cook for 2-3 minutes until everything is heated through and the cheese has melted.

Step 9

Finish by adding the fresh lemon juice and chopped parsley. Toss well, then serve immediately, garnishing with more parmesan if desired.
