Ingredients

  • 12 ounces low-carb pasta (such as shirataki noodles or zucchini noodles)
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 0.25 teaspoons red pepper flakes
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.5 cups grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

If using shirataki noodles, rinse them well under cold water, drain, and pat dry with paper towels. If using zucchini noodles, spiralize the zucchini and set aside.

Step 2

Bring a pot of water to a boil and blanch the broccoli florets for 2 minutes until bright green and just tender. Drain and immediately transfer them to a bowl of ice water to stop the cooking process. Drain again and set aside.

In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to brown the garlic.
