Ingredients

  • 6 whole Passion fruits
  • 1 cup Water
  • 0.25 cup Erythritol
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Xanthan gum
  • 1 pinch Salt

Directions

Step 1

Cut the passion fruits in half and scoop out the pulp and seeds into a bowl. Measure approximately 1 cup of passion fruit pulp.

Step 2

In a medium saucepan, combine the passion fruit pulp and 1 cup of water. Heat over medium heat until it starts to simmer.

Step 3

Add 0.25 cup of erythritol to the saucepan and stir until dissolved.

Step 4

Add 2 tablespoons of lemon juice and a pinch of salt to the mixture, stirring to combine.

Step 5

Gradually sprinkle in 0.5 teaspoon of xanthan gum, whisking continuously to avoid clumps, until the sauce begins to thicken.

Step 6

Once thickened, remove the saucepan from heat and allow the sauce to cool slightly.
