In a large mixing bowl, combine almond flour, coconut flour, psyllium husk, xanthan gum, and salt. Mix well until all the dry ingredients are evenly combined.
Gradually add hot water to the dry mixture while stirring continuously. The dough will start to come together, forming a slightly sticky texture.
Add chopped fresh coriander to the dough and knead gently until the mixture is firm and well combined. Let the dough rest for about 10 minutes to allow the ingredients to bind properly.
Divide the dough into 4 equal portions. Roll each portion into a ball and flatten it slightly using your palms.
Place a sheet of parchment paper on a flat surface. Using a rolling pin, roll out one of the dough balls between two sheets of parchment paper to prevent sticking, forming a circle about 6 inches in diameter and approximately 1/8 inch thick.
