Ingredients

  • 2 pieces (8 oz each) ribeye or sirloin steak
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves, minced garlic
  • 2 tablespoons, chopped fresh parsley
  • 1 tablespoon, chopped fresh thyme
  • 1 teaspoon, chopped fresh rosemary
  • 1 teaspoon lemon juice

Directions

Step 1

Remove the steaks from the refrigerator and allow them to come to room temperature for about 30 minutes before cooking. This ensures even cooking throughout the steak.

Step 2

Season the steaks on both sides with kosher salt and black pepper, pressing the seasoning into the meat to adhere.

Step 3

Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Add the olive oil and heat until shimmering.

Step 4

Lay the steaks in the pan, ensuring they do not touch each other. Sear the steaks for about 3-4 minutes on each side, or until a deep brown crust forms.

Step 5

Reduce the heat to medium and add the butter to the pan. As the butter melts, add the minced garlic, fresh parsley, fresh thyme, and fresh rosemary.

Step 6

Tilt the pan slightly to pool the butter and continuously spoon the melted butter mixture over the steaks. Continue this process for about 2-3 minutes, or until the internal temperature of the steak reaches your desired level (125°F for rare, 135°F for medium-rare, and 145°F for medium).

Step 7

Remove the steaks from the pan and cover them loosely with aluminum foil. Allow them to rest for 5 minutes to reabsorb the juices.

Step 8

Add the lemon juice to the pan and swirl to combine with the garlic herb butter sauce.

Step 9

Serve the steak topped with the garlic herb butter sauce, garnished with additional parsley if desired.
