Ingredients

  • 1 pound ground chicken
  • 2 tablespoons coconut oil
  • 4 cloves garlic
  • 2 medium Thai chili peppers
  • 1 small onion
  • 1 medium red bell pepper
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon erythritol
  • 1 tablespoon low-sodium chicken broth
  • 1 cup Thai basil leaves
  • 1 half lime
  • 3 cups zucchini noodles

Directions

Step 1

Start by preparing all the ingredients. Mince the garlic cloves and Thai chili peppers. Dice the onion and slice the red bell pepper into thin strips.

Step 2

Heat the coconut oil in a large skillet or wok over medium-high heat.

Step 3

Once the oil is hot, add the minced garlic and Thai chili peppers. Stir-fry for about 30 seconds until fragrant.

Step 4

Add the diced onion and sliced red bell pepper to the pan. Stir-fry for about 3 minutes until the vegetables begin to soften.

Step 5

Add the ground chicken to the skillet, breaking it up into small pieces with a wooden spoon. Cook until the chicken is no longer pink, about 5 minutes.

Step 6

In a small bowl, mix the fish sauce, soy sauce, erythritol, and chicken broth together.

Step 7

Pour the sauce mixture over the chicken and vegetables, stirring well to coat evenly.

Step 8

Increase the heat to high and add the Thai basil leaves. Stir-fry for another 2 minutes until the basil is wilted and the mixture is well combined.

Step 9

Squeeze fresh lime juice over the stir-fry and give it a final stir.

Step 10

Serve the low carb Pad Krapow over zucchini noodles, dividing equally among four plates.
