Ingredients

  • 12 pounds Whole turkey
  • 0.5 cup Olive oil
  • 6 cloves Garlic cloves, minced
  • 2 tablespoons Fresh rosemary, chopped
  • 2 tablespoons Fresh thyme, chopped
  • 1 tablespoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 whole Lemon, sliced
  • 1 whole Onion, quartered
  • 1 cup Chicken broth

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

Remove the giblets from the turkey cavity and pat the turkey dry with paper towels.

Step 3

In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and paprika with the olive oil to create a herb paste.

Step 4

Carefully loosen the skin over the turkey breast by gently sliding your fingers underneath it. Rub half of the herb paste under the skin and the other half over the skin of the entire turkey.

Step 5

Stuff the cavity of the turkey with the lemon slices and the quartered onion.

Step 6

Place the turkey on a rack in a roasting pan and pour the chicken broth into the bottom of the pan.

Step 7

Insert a meat thermometer into the thickest part of the thigh without touching the bone.

Step 8

Roast the turkey in the preheated oven. Baste the turkey every 45 minutes with the juices from the roasting pan. Add more broth if needed to maintain moisture.

Continue roasting until the internal temperature reaches 165°F (74°C), which should take about 2.5 to 3 hours, depending on your oven and the size of the turkey.

Step 10

Remove the turkey from the oven, tent it with aluminum foil, and let it rest for at least 20 minutes before carving.
