Ingredients

  • 1 pound Ground beef
  • 0.5 pound Ground pork
  • 0.25 cup Almond flour
  • 0.5 cup Parmesan cheese, grated
  • 1 large Egg
  • 2 cloves Garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes
  • 0.25 cup Fresh parsley, chopped
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, almond flour, and grated Parmesan cheese.

Step 3

Crack the egg into the mixture and add the minced garlic, Italian seasoning, salt, black pepper, and crushed red pepper flakes.

Step 4

Mix all ingredients by hand until well blended but do not overmix to avoid tough meatballs.

Step 5

Gently fold in the chopped fresh parsley.

Step 6

Using your hands, form the mixture into 1.5-inch (about the size of a golf ball) meatballs and place them evenly spaced on the prepared baking sheet.

Step 7

Drizzle olive oil evenly over the meatballs to help them brown while baking.

Step 8

Bake in the preheated oven for 20 to 25 minutes or until the meatballs are browned and cooked through (internal temperature at least 160°F).

Step 9

Remove from the oven and let them rest for a few minutes before serving. Pair with a low-carb marinara sauce or a fresh salad.
