Ingredients

  • 4 pieces Large eggs
  • 2 liters Water
  • 1 bowl Ice water
  • 2 tablespoons Soy sauce (optional)
  • 2 tablespoons Chopped green onions (optional)

Directions

Step 1

Fill a large pot with 2 liters of water and bring it to a boil over high heat.

Step 2

Once boiling, turn off the heat and let the water cool down for 1 minute. The temperature should be around 160°F (70°C) to ensure perfect Onsen eggs.

Step 3

Carefully add the eggs straight from the refrigerator into the pot. Cover the pot with a lid.

Step 4

Allow the eggs to sit undisturbed for 15 minutes to cook at a low and even temperature.

Step 5

Meanwhile, prepare a bowl with ice water.

Step 6

After 15 minutes, remove the eggs from the pot and immediately transfer them to the ice water bowl. Let them cool down for at least 10 minutes; this stops the cooking process and makes peeling easier.

Step 7

Once cooled, gently crack the shells and peel the eggs. Be careful, as they will be quite delicate.

Step 8

Serve the Onsen eggs warm, over salads, rice bowls, or as a side. For added flavor, drizzle with soy sauce and garnish with chopped green onions if desired.
