Ingredients

  • 1 cup Almond flour
  • 0.5 cup Greek yogurt
  • 0.5 cup Water
  • 1 large Egg
  • 1 medium, finely chopped Onion
  • 1 finely chopped Green chili
  • 2 tablespoons, chopped Fresh coriander leaves
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Baking powder
  • 2 tablespoons Oil

Directions

Step 1

In a mixing bowl, combine almond flour, Greek yogurt, water, and egg. Whisk until smooth and lump-free to form a batter.

Step 2

Add salt and baking powder to the batter, and mix well to incorporate them.

Step 3

Preheat a non-stick skillet over medium heat and add a little oil, just enough to coat the surface.

Step 4

Pour a ladleful of batter onto the center of the skillet, spreading it with the back of the ladle to form a small circle, about 1/4 inch thick.

Step 5

Sprinkle chopped onion, green chili, and fresh coriander leaves evenly over the surface of the batter.

Drizzle a few drops of oil around the edges and on the surface of the uttapam.

Cook for 2-3 minutes until the bottom is golden brown and the top starts to set.

Carefully flip the uttapam using a spatula and cook for another 2 minutes until the onions are slightly caramelized and the uttapam is cooked through.

Repeat the process with the remaining batter, adding more oil as needed.
