Ingredients

  • 300 grams Cauliflower rice
  • 150 grams Boneless chicken breast
  • 0.5 medium Onion
  • 0.5 medium Carrot
  • 50 grams Green peas
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Soy sauce
  • 1 tablespoon Ketchup
  • 3 large Eggs
  • 2 tablespoons Milk
  • 1 tablespoon Butter

Directions

Step 1

Begin by finely dicing the onion and carrot. Cut the chicken breast into small cubes.

Step 2

Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the diced onion and cook until translucent, about 3 minutes.

Step 3

Add the diced chicken to the pan. Stir frequently and cook until the chicken is no longer pink.

Step 4

Add the diced carrot and green peas to the pan. Stir and cook for another 3-4 minutes until the vegetables are slightly tender.

Step 5

Stir in the cauliflower rice, soy sauce, and ketchup. Mix well and cook for 3-4 minutes. Season with salt and black pepper. Remove from heat and set aside.

Step 6

In a separate bowl, crack the eggs and whisk together with milk. Season lightly with salt.

Heat another tablespoon of olive oil in a non-stick skillet over medium heat. Pour in half of the egg mixture and let it spread evenly over the pan.

Cook the omelet until the edges start to firm up, about 1-2 minutes. Add half of the cauliflower rice filling onto one side of the omelet.

Using a spatula, gently fold the other side of the omelet over the filling to enclose it. Slide the omurice onto a serving plate, seam-side down.

Repeat the process to make the second omurice with the remaining egg mixture and cauliflower rice filling.

Step 11

Garnish with a drizzle of ketchup and serve immediately.
