Ingredients

  • 1 kilogram Beef shank or stew meat
  • 1 piece Onion (large, finely sliced)
  • 1 tablespoon Ginger paste
  • 1 tablespoon Garlic paste
  • 2 tablespoons Nihari masala
  • 0.5 teaspoon Cayenne pepper (optional)
  • 0.25 cup Ghee or clarified butter
  • 1 teaspoon Salt
  • 5 cups Water
  • 2 tablespoons Almond flour
  • 0.25 cup Fresh coriander (chopped)
  • 2 pieces Green chili (sliced)
  • 1 piece Lemon (sliced)
  • 1 tablespoon Ginger (julienned)

Directions

Step 1

In a large pot, heat ghee over medium heat. Add the sliced onions and sauté until golden brown.

Step 2

Add the ginger paste and garlic paste to the onions, stir well, and cook for 2 minutes until fragrant.

Step 3

Add the beef pieces to the pot and cook until they are browned on all sides.

Step 4

Stir in the Nihari masala, cayenne pepper (if using), and salt, coating the beef evenly with the spices.

Pour the water into the pot and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for approximately 2.5 to 3 hours, or until the beef is tender and the flavors have melded together.

Stir occasionally and check water levels to ensure the stew doesn’t dry out. Add additional water if necessary.
