Ingredients

  • 1.5 cups Almond flour
  • 0.25 cups Coconut flour
  • 2 large Eggs
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Baking powder
  • 0.25 cup Erythritol or preferred low-carb sweetener
  • 0.25 teaspoon Salt
  • 0.75 cup Warm water
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Yeast
  • Oil for frying (coconut, avocado or olive oil)

Directions

Step 1

In a small bowl, dissolve the yeast in warm water and allow it to sit for about 5 minutes until it becomes frothy.

Step 2

In a large bowl, mix together the almond flour, coconut flour, xanthan gum, baking powder, erythritol, and salt.

Step 3

In another bowl, beat the eggs and mix in vanilla extract.

Step 4

Combine the egg mixture with the dry ingredients, then add the yeast mixture and stir until well incorporated. The dough should be thick but slightly sticky.

Cover the dough with a clean cloth and let it rise in a warm place for about 30 minutes.
