Ingredients

  • 2 large rutabagas
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 0.25 cup water
  • 1.5 cups grated cheddar cheese
  • 0.5 cup heavy cream
  • 1 tablespoon butter
  • 0.5 cup diced tomatoes
  • 0.25 cup sliced black olives
  • 0.25 cup chopped green onions
  • 0.25 cup sliced jalapeños
  • 0.5 cup sour cream
  • 0.5 cup guacamole

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Peel and cut the rutabagas into 1/4-inch thick fries.

Step 3

In a large bowl, toss rutabaga fries with olive oil, salt, and black pepper until well-coated.

Step 4

Arrange the fries in a single layer on a baking sheet lined with parchment paper.

Step 5

Bake the fries in the preheated oven for 30 to 35 minutes, flipping halfway through, until they are golden and crispy.

Step 6

Meanwhile, in a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.

Step 7

Add taco seasoning and water to the beef in the skillet. Stir to combine and let simmer for 5 minutes.

Step 8

In a small saucepan over low heat, combine butter, heavy cream, and grated cheddar cheese. Stir continuously until the cheese is fully melted and the sauce is smooth.

Step 9

Remove the baked fries from the oven and transfer them to a serving platter.

Step 10

Top the fries with cooked ground beef, followed by the cheese sauce.

Step 11

Sprinkle diced tomatoes, sliced black olives, chopped green onions, and sliced jalapeños over the top.

Step 12

Serve immediately with sides of sour cream and guacamole.
