Ingredients

  • 3 pieces large eggs
  • 1 tablespoon heavy cream
  • 1 tablespoon butter
  • 0.5 cup white or cremini mushrooms
  • 0.33 cup Swiss cheese
  • 1 teaspoon chives (optional, for garnish)
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper

Directions

Step 1

Crack the eggs into a medium-sized mixing bowl. Add heavy cream, salt, and black pepper. Whisk together until fully blended and slightly frothy.

Step 2

Clean and slice the mushrooms thinly. Set them aside.

Step 3

Heat a non-stick skillet over medium heat and melt the butter until it begins to foam.

Step 4

Add the sliced mushrooms to the skillet. Sauté for 3-4 minutes, stirring occasionally, until they are tender and slightly browned. Remove the mushrooms from the pan and set them aside.

Step 5

Lower the heat to medium-low and pour the whisked eggs into the skillet. Swirl the pan gently to spread the eggs into an even layer.

Step 6

Cook the eggs for 2-3 minutes or until the edges begin to set, but the center is still slightly runny.

Step 7

Evenly distribute the sautéed mushrooms and Swiss cheese over one half of the omelet.

Step 8

Carefully fold the other half of the omelet over the filling using a spatula. Press gently to seal.

Step 9

Continue to cook for 1 more minute to melt the cheese and allow the omelet to fully set.

Step 10

Slide the omelet onto a plate and garnish with chopped chives, if desired. Serve immediately and enjoy!
