Ingredients

  • 1 tablespoon Olive oil
  • 250 grams Button mushrooms
  • 2 whole Garlic cloves
  • 100 grams Spinach leaves
  • 6 whole Eggs
  • 120 milliliters Heavy cream
  • 100 grams Cream cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 50 grams Grated Parmesan cheese
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Heat olive oil in a large skillet over medium heat. Add the mushrooms and cook until they are golden brown, about 5-7 minutes. Stir occasionally.

Step 3

Finely chop the garlic and add it to the skillet with the mushrooms, cooking for an additional 1-2 minutes until fragrant.

Step 4

Add the spinach leaves to the skillet and cook until wilted, about 2 minutes. Remove the skillet from the heat and set aside.

Step 5

In a large mixing bowl, whisk together the eggs, heavy cream, and softened cream cheese until smooth and well combined.

Step 6

Stir in the salt, pepper, and grated Parmesan cheese into the egg mixture.

Step 7

Gently fold the cooked mushrooms, garlic, and spinach into the egg mixture. Ensure that everything is evenly distributed.

Step 8

Pour the mixture into a greased 9-inch pie or quiche dish.

Step 9

Place the quiche dish in the oven and bake for 30-35 minutes, or until the quiche is set and the top is lightly golden.

Step 10

Remove the quiche from the oven and allow it to cool for a few minutes before slicing.

Step 11

Garnish with fresh parsley before serving.
