Ingredients

  • 1 medium head Cauliflower
  • 1 large Egg
  • 1 cup Parmesan cheese
  • 1 cup Mozzarella cheese, shredded
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Cherry tomatoes, halved
  • 4 ounces Fresh mozzarella, sliced
  • 10 leaves Fresh basil leaves
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower resembles fine crumbs or rice.

Step 3

Transfer the processed cauliflower into a microwave-safe bowl. Cover it with a microwave-safe lid or plastic wrap and microwave on high for 5 minutes.

Carefully transfer the microwaved cauliflower onto a clean kitchen towel. Allow it to cool slightly, then wrap the towel around the cauliflower and squeeze out as much moisture as possible.

In a large mixing bowl, combine the drained cauliflower with the egg, Parmesan cheese, 1/2 cup of mozzarella cheese, garlic powder, oregano, salt, and pepper. Mix until thoroughly combined.

Place the cauliflower mixture onto the prepared baking sheet and press it into a circular crust, about 1/4 inch thick.
