Ingredients

  • 250 grams Black-eyed peas
  • 1 medium Red bell pepper
  • 1 medium Onion
  • 50 ml Olive oil
  • 50 grams Smoked fish (optional, for flavor)
  • 1 teaspoon Crushed red pepper flakes
  • 1 teaspoon Salt
  • 1 tablespoon Ground crayfish (optional)
  • 300 ml Water
  • 1 pack Foil or moi moi leaves

Directions

Step 1

Rinse the black-eyed peas thoroughly. To peel the beans, soak them in water for about 5 minutes, then rub them between your palms to remove the skin. Repeat until most of the skin is removed and the beans are white.

Step 2

Place the peeled beans, red bell pepper, onion, and water in a blender. Blend into a smooth batter. Ensure there are no lumps.

Step 3

Pour the blended mixture into a large bowl. Add olive oil, salt, crushed red pepper flakes, ground crayfish, and smoked fish pieces to the batter. Mix well with a wooden spoon or spatula.

Step 4

Prepare your steaming equipment. You can use a large pot fitted with a steamer basket or a steaming rack. Add enough water to the pot, making sure the water doesn't touch the steamer basket.
