Ingredients

  • 4 cups water
  • 1 teaspoon dashi powder
  • 2 tablespoons red or white miso paste
  • 7 ounces firm tofu
  • 2 stalks green onions
  • 1 tablespoon wakame seaweed

Directions

Step 1

1. Prepare the ingredients: Cut the firm tofu into small cubes (approximately 1/2 inch each). Slice the green onions thinly.

Step 2

2. Soak the wakame seaweed in a bowl of water for 5 minutes until it expands. Drain and set aside.

Step 3

3. In a medium-sized pot, bring 4 cups of water to a gentle boil over medium heat.

Step 4

4. Add the dashi powder to the pot and stir until completely dissolved.

Step 5

5. Reduce the heat to low and add the miso paste. To avoid clumping, dissolve the paste in a ladle or small bowl of hot dashi broth before stirring it back into the soup.

Step 6

6. Gently stir in the cubed tofu. Let it warm through in the soup for about 2 minutes.

Step 7

7. Add the soaked wakame seaweed and allow the soup to simmer for an additional 3 minutes.

Step 8

8. Just before serving, garnish with sliced green onions.

Step 9

9. Serve hot and enjoy your comforting bowl of low carb miso soup with tofu.
