Ingredients

  • 1 whole cauliflower head, grated or riced
  • 1 whole large egg
  • 1 cup shredded mozzarella cheese
  • 2 tbsp almond flour
  • 0.5 tsp garlic powder
  • 0.5 tsp dried oregano
  • 0.25 tsp salt
  • 0.5 cup pizza sauce
  • 0.5 cup mini pepperoni slices or sliced turkey pepperoni
  • 0.5 cup additional shredded mozzarella cheese
  • 2 tbsp fresh basil leaves, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.

Step 2

Place the riced cauliflower in a microwave-safe bowl and microwave on high for 4-5 minutes until soft. Allow it to cool slightly.

Step 3

Transfer the cooled cauliflower onto a clean towel and squeeze out as much moisture as possible.

In a mixing bowl, combine the drained cauliflower, egg, 1 cup of shredded mozzarella, almond flour, garlic powder, oregano, and salt. Mix until well combined.

Divide the mixture into 8 equal portions and shape each portion into a small bagel-sized disk, approximately 1/2 inch thick, on the prepared baking tray.
