Ingredients

  • 1 medium Cauliflower head
  • 1 large Egg
  • 120 grams Shredded mozzarella cheese
  • 30 grams Grated Parmesan cheese
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Dried oregano
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 120 milliliters Pizza or tomato sauce
  • 50 grams Mini pepperoni or sliced veggies
  • 1 as needed Olive oil spray
  • 5 leaves Fresh basil leaves

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

Remove the leaves and core from the cauliflower, then cut it into florets.

Step 3

Place cauliflower florets in a food processor and pulse until they reach a rice-like consistency.

Step 4

Transfer the cauliflower 'rice' to a microwave-safe bowl and microwave for about 5 minutes, until soft. Allow it to cool slightly.

Step 5

Place the cooked cauliflower in a clean kitchen towel or cheese cloth and squeeze out as much moisture as possible to ensure a crispy pizza crust.

In a mixing bowl, combine the cauliflower with the egg, 60 grams of mozzarella, Parmesan cheese, garlic powder, oregano, salt, and black pepper. Mix until thoroughly combined.

Divide the mixture into 8 equal portions and form each portion into a small round crust on the prepared baking sheet.
