Ingredients

  • 250 grams Boneless, skinless chicken breast
  • 50 grams Coconut flour
  • 50 grams Almond flour
  • 3 large Eggs
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 2 tablespoons Soy sauce
  • 1 teaspoon Ginger, grated
  • 0.5 teaspoon Chili flakes
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Green onions, chopped

Directions

Step 1

Start by preparing the chicken filling. Cut the chicken breast into small cubes.

Step 2

In a medium-sized skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and grated ginger, and sauté for 1 minute until fragrant.

Step 3

Add the chicken cubes to the skillet. Cook the chicken until it is no longer pink, around 5-7 minutes.

Step 4

Add soy sauce, chili flakes, and black pepper to the chicken. Cook for an additional 3 minutes. Remove from heat and set aside to cool slightly.

In a large bowl, combine the coconut flour, almond flour, baking powder, and salt.

In another bowl, beat 2 eggs and combine them with the flours. Mix well to form a dough. If the dough is too sticky, add a bit more almond flour.

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
