Ingredients

  • 2 large ripe bananas
  • 1.5 cups almond flour
  • 0.25 cup coconut flour
  • 0.5 cup erythritol sweetener
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 2 large eggs
  • 0.25 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 0.25 cup melted coconut oil

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini muffin liners.

In a large mixing bowl, mash the ripe bananas with a fork until smooth.

Add almond flour, coconut flour, erythritol, baking powder, baking soda, cinnamon, and salt to the mashed bananas. Stir until well combined.
