Ingredients

  • 300 grams Cauliflower rice
  • 500 milliliters Unsweetened almond milk
  • 50 grams Granulated erythritol
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 20 grams Butter (or coconut oil for dairy-free)
  • 100 milliliters Heavy cream (or coconut cream for dairy-free)

Directions

Step 1

In a medium saucepan, add the almond milk, granulated erythritol, vanilla extract, cinnamon, and salt. Stir well to combine the ingredients.

Step 2

Bring the mixture to a gentle simmer over medium heat, stirring occasionally.

Step 3

Once the milk mixture is simmering, add the cauliflower rice to the saucepan.

Step 4

Reduce the heat to low and continue to cook, stirring frequently, for about 15 minutes or until the cauliflower rice has softened and absorbed much of the liquid.

Step 5

Stir in the butter and the heavy cream until fully incorporated, allowing the mixture to thicken and become creamy. Cook for an additional 2-3 minutes.

Step 6

Taste the milchreis and adjust sweetness with more erythritol if desired.

Step 7

Remove the saucepan from the heat and let it sit for a minute before serving.

Step 8

Serve warm or cold, topped with a sprinkle of additional cinnamon for garnish, if desired.
