Ingredients

  • 1 large Eggplant
  • 3 tablespoons Olive oil
  • 1 medium Red bell pepper
  • 1 medium Cucumber
  • 200 grams Cherry tomatoes
  • 0.5 medium Red onion
  • 75 grams Kalamata olives
  • 100 grams Feta cheese
  • 0.25 cup Fresh parsley
  • 2 tablespoons Lemon juice
  • 1 clove Garlic
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Cut the eggplant into 1-inch cubes and spread them out on a baking sheet.

Drizzle 2 tablespoons of olive oil over the eggplant cubes, and toss to coat evenly. Sprinkle with a pinch of salt and pepper.
