  • 12 leaves Green cabbage leaves
  • 500 grams Ground chicken
  • 1 large Egg
  • 100 grams Spinach
  • 50 grams Almond flour
  • 1 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 30 grams, freshly chopped Parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 2 tablespoons Butter
  • 500 ml Chicken or vegetable broth

Directions

Step 1

Start by preparing the cabbage leaves. Bring a large pot of water to boil and add the cabbage leaves. Blanch them for 2-3 minutes until slightly softened, then remove and set aside to cool.

Step 2

In a large bowl, mix together the ground chicken, egg, finely chopped spinach, almond flour, chopped onion, minced garlic, chopped parsley, salt, black pepper, and nutmeg. Mix until all ingredients are well combined.

Take a cooled cabbage leaf and place about 2-3 tablespoons of the chicken mixture on one end. Fold in the sides and roll up the leaf to enclose the filling, similar to rolling a burrito. Repeat with the remaining leaves and filling.
