Ingredients

  • 1.5 cups Almond flour
  • 0.5 cup Granulated erythritol
  • 2 tablespoons Matcha green tea powder
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, softened
  • 1 teaspoon Vanilla extract
  • 1 large Egg

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together almond flour, erythritol, matcha powder, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the softened butter with an electric mixer until creamy and smooth.

Step 4

Add the vanilla extract and egg to the butter, and beat until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms.

Step 6

Scoop tablespoon-sized amounts of dough and roll them into balls. Place them on the prepared baking sheet, about 2 inches apart.

Step 7

Gently flatten each dough ball with your fingers or the back of a spoon to about 1/4 inch thickness.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges begin to turn golden.

Step 9

Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
