Ingredients

  • 1 large cauliflower head
  • 2 cups broccoli florets
  • 3 tablespoons unsalted butter
  • 0.25 cup heavy cream
  • 2 garlic cloves, minced
  • 0.5 cup Parmesan cheese, grated
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 cup water

Directions

Step 1

Cut the cauliflower into small florets, discarding the core.

Step 2

In a large pot, bring 1 cup of water to a boil. Add the cauliflower and broccoli florets, cover, and steam for 8-10 minutes until both are tender.

Step 3

Drain the vegetables well and return them to the pot. Use a clean cloth or paper towels to press out excess moisture.

Step 4

In the same pot over low heat, add the butter and heavy cream. Stir in the minced garlic and cook for 2 minutes until the garlic is fragrant.

Step 5

Remove from heat. Add the steamed cauliflower and broccoli to the pot along with Parmesan cheese, salt, and black pepper.

Step 6

Using an immersion blender, blend the mixture until smooth and creamy. You can also transfer the mixture to a food processor if preferred.

Step 7

Taste and adjust seasoning if necessary.

Step 8

Transfer the mashed vegetables to a serving dish and garnish with fresh chopped parsley before serving.
