Ingredients

  • 1 Cauliflower (medium head)
  • 2 tablespoons Unsalted butter

  • 1 tablespoon Olive oil
  • 1 cup Chicken or vegetable broth
  • 0.25 teaspoon Xanthan gum
  • 1 teaspoon Fresh thyme (optional, for garnish)

Directions

Step 1

Remove the leaves and core of the cauliflower and chop it into small florets.

In a large pot, bring water to a boil and add a pinch of salt.

Add the cauliflower florets to the boiling water and cook for about 8-10 minutes, or until tender.
