Ingredients

  • 1 medium head Cauliflower
  • 2 cups Mozzarella cheese, shredded
  • 0.25 cup Grated Parmesan cheese
  • 1 large Egg
  • 1 tsp Italian seasoning
  • 0.25 tsp Salt
  • 0.5 cup Tomato sauce
  • 5 oz Fresh mozzarella, sliced
  • 0.5 cup Fresh basil leaves
  • 1 tbsp Olive oil

Directions

Step 1

1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. Remove the leaves and stem from the cauliflower. Cut it into florets, then pulse them in a food processor until rice-sized.

3. Transfer the cauliflower rice to a microwave-safe bowl, cover, and microwave for 4-5 minutes until softened.

4. Let the cauliflower cool slightly, then place it in a clean kitchen towel and squeeze out as much moisture as possible.
