Ingredients

  • 240 ml Unsweetened almond milk
  • 2 tablespoons Erythritol sweetener
  • 120 ml Coconut cream
  • 0.5 teaspoons Vanilla extract
  • 1 teaspoon Lemon juice
  • 500 grams Ice cubes
  • 4 leaves Mint leaves

Directions

Step 1

Peel the mango and cut it into small cubes. Set aside 1/3 of the mango cubes for the topping.

In a blender, combine the remaining mango cubes, unsweetened almond milk, erythritol sweetener, vanilla extract, and lemon juice. Blend until smooth.

Strain the mango mixture through a fine sieve to remove any fibrous bits for a smoother texture.

Pour the strained mixture into ice cube trays and freeze for at least 4 hours or until solid.
