Ingredients

  • 200 grams low-carb macaroni pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 medium onion
  • 400 grams diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup grated Parmesan cheese
  • 4 leaves fresh basil leaves

Directions

Step 1

Bring a pot of salted water to a boil over high heat. Add the low-carb macaroni pasta and cook according to the package instructions, or until al dente. Drain and set aside.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

Step 3

Finely chop the garlic cloves and onion. Add them to the skillet and sauté for about 3-4 minutes, or until the onion becomes translucent.

Step 4

Add the diced tomatoes (with their juice) and tomato paste to the skillet. Stir to combine.

Step 5

Season the tomato mixture with dried oregano, dried basil, salt, and black pepper. Mix well.

Step 6

Simmer the sauce on low heat for about 10 minutes, stirring occasionally until it thickens slightly.

Step 7

Add the cooked macaroni to the tomato sauce in the skillet. Toss to coat the pasta evenly with the sauce.

Step 8

Serve the macaroni pasta hot, topped with grated Parmesan cheese and fresh basil leaves for garnish.
