Ingredients

  • 500 grams Bottle gourd (lauki)
  • 1 medium Onion
  • 1 medium Tomato
  • 1 tablespoon Ginger garlic paste
  • 1 small Green chili
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Cumin seeds
  • 0.5 teaspoon Garam masala
  • 0.5 teaspoon Salt
  • 2 tablespoons Cilantro (fresh coriander leaves)
  • 1 tablespoon Olive oil
  • 1 cup Water

Directions

Step 1

Peel the bottle gourd and cut it into small cubes.

Step 2

Finely chop the onion and tomato. Slit the green chili lengthwise.

Step 3

Heat olive oil in a pan over medium heat. Add cumin seeds and allow them to splutter.

Step 4

Add the chopped onion to the pan. Sauté until the onions turn translucent.

Step 5

Add the ginger garlic paste and slit green chili. Sauté for another minute until the raw smell disappears.

Step 6

Add the chopped tomato and cook until they become soft and mushy.

Step 7

Stir in the turmeric powder, coriander powder, and salt. Mix well.

Step 8

Add the cubed bottle gourd to the pan. Mix to coat them well with the spices.

Step 9

Pour in the water, cover the pan, and let it cook on low heat for about 15 minutes or until the bottle gourd becomes tender.

Step 10

Once the bottle gourd is cooked, uncover and add the garam masala. Mix well.

Step 11

Simmer for another 2-3 minutes to allow the flavors to blend.

Turn off the heat and garnish with chopped cilantro.
