Ingredients

  • 2 large Zucchini
  • 2 tablespoons Olive oil
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Cheddar cheese, shredded
  • 4 slices Bacon, cooked and crumbled
  • 2 stalks Green onions, sliced
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 cup Sour cream (optional)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

Wash and dry the zucchinis. Cut them into thin strips, about a quarter-inch thick, resembling fries.

Step 3

In a large bowl, toss the zucchini strips with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.

Step 4

Spread the zucchini strips in a single layer on the prepared baking sheet, making sure not to overcrowd them.

Step 5

Bake in the preheated oven for 20 minutes, flipping halfway through, until they are golden and crispy.

Step 6

Remove the zucchini fries from the oven and evenly sprinkle shredded Cheddar cheese over the top.

Step 7

Sprinkle the crumbled bacon over the cheese.

Step 8

Return the baking sheet to the oven for an additional 3-5 minutes or until the cheese has melted.

Step 9

Transfer the loaded cheese fries to a serving platter and sprinkle with sliced green onions and chopped parsley.

Step 10

Serve immediately with a side of sour cream, if desired.
